A Taste of the Good Life: Fragrant Rosemary, Lentil & Barley Stew

Ingredients

4 cups vegetable stock
3/4 cup French green lentils
1/2 cup hulled barley
14.5 ounces canned diced tomatoes
1/2 cup onion, diced
1 teaspoon dried rosemary
1 teaspoon balsamic vinegar
1/2 teaspoon garlic powder
sea salt and freshly ground black pepper, to taste


Directions

Combine all ingredients in a 4-qt. stock pot. Bring barely to a rolling boil, reduce heat to low. Simmer for 1 hour, stirring occasionally.
