A Taste of the Good Life: Sundried Tomato Pesto Grilled Cheese
Adding pesto is an easy way to dress up a grilled cheese sandwich—making it a delicious and easy option for a quick lunch during a discipleship meeting.
Sundried Tomato Pesto Grilled Cheese

4 thick slices Italian country bread, such as pane bello
2 tablespoons extra virgin olive oil
3 tablespoons sundried tomato basil pesto sauce
2 ounces mozzarella cheese, sliced
1 ounce parmesan cheese, shaved
Using a pastry brush, spread extra virgin olive oil on one side of each slice of bread. The oiled side will be the outside of the sandwich, which comes into contact with the grill.
Preheat a panini press on high heat. (Alternatively, the sandwiches may be grilled on a stovetop griddle pan preheated to medium-high.)
Spread half of the pesto evenly on the unoiled side of two slices of bread—one slice from each sandwich. Layer the two cheeses on the unoiled sides of the other slices of bread. Top the cheese slice with a pesto slice, and place the sandwiches on a panini press. Grill for 3 minutes. (If grilling on the stovetop, grill each side for 3 minutes.
